A Cinna-Banana Breakfast

Let’s face it, most of us are not morning people! Hence, I present to you the easiest breakfast quick-fix that is also healthy and delicious; a mini banana breakfast cake. The perfect pairing for your morning coffee, you are sure to go bananas over this recipe!

Ingredients:
1 small ripe bananas
45 gms oats
60 ml soy milk (or any other non-dairy milk of your choice)
1 tsp baking powder
2 tsp honey/ maple syrup
¾ tsp cinnamon powder
½ tsp vanilla essence
1 tbsp coconut sugar (optional, for additional sweetness)
2 tsp dark chocolate chips
Method:
1. Preheat your oven to 180C.
2. Add your oats to a blender and pulse until a fine powder has formed.
3. Chop your bananas roughly and add it to the same blender along with the soy milk, baking powder, honey. cinnamon powder, coconut sugar and vanilla essence.
4. Blend all the ingredients together until a smooth, thick batter has formed.
5. Pour the batter into ramekins or any oven-safe glass bowl (that’s around 4.5” wide and 3” deep for one large cake).
6. Top with the chocolate chips and bake for 15-20 minutes or until a wooden skewer inserted in the centre comes out clean.
7. Gobble it up while it is still warm with a drizzle of maple syrup or as is!
