Mango Mania: Mango Chia Seed Pudding

Helloooo summertime! Which also means hello mango time! A little love from the king of fruits never hurt. Here’s a 4-step, one bowl, vegan, healthy breakfast/snack that's also delicious; what's not to love?!



Ingredients:

2 Tbsp chia seeds

1/2 cup (120 ml) non-dairy milk of your choice

2 tbsp mango pulp/puree

1/2tbsp maple syrup (optional)

1/3 mango (cut into pieces/slices) for topping


Method:

1. In an airtight container, mix together the chia seeds, milk of choice and maple syrup until well combined.

2. Close the container and refrigerate overnight.

3. The next day, you will find that the chia seeds have absorbed the liquid from the milk and set to form a pudding-like consistency.

4. Add the mango pulp/puree and mix till well combined. The pudding should turn a gorgeous creamy yellow colour.

5. Top with your desired fruits and nuts and enjoy!



NOTE: You can make a large quantity of this chia seed pudding to last you a week by following the ratio to follow is 1:4 (1 portion of chia seeds to 4 portions of milk). Store in an airtight container under refrigeration. Do not add the toppings or pulp to the container as these may contaminate the pudding and reduce its shelf life. Instead remove the desired portion of pudding in a small bowl and top with your favourite additions.
